I think that you are right, because the most common "T" in the second part is indeed like the unusual second letter from "Stoitsef" and not like the first one.
In that case it looks like the word "Stoitsef" was not in the original text, because this is where you find the only small "T" written in the normal way.
You should distinguish capital letters from small letters. If you take a look at how the author writes "P" you might get surprised, yet, the unusual small "P" that is used especially in the first part of the document is not in contradiction with the capital "P" which is in the normal form.
In the same fashion, the narmal capital "T" in words like "Tourkiki" is not unusual in comparison to the different unusual small "T" throughout the document. Nevertheless, the different small "T"'s in Stoitsef point to a forged word.
